Other versions of this recipe are named Cowboy Caviar and Texas Caviar; instead of following a recipe, I used what I had in the pantry to incorporate the traditional New Year's Eve "good-luck" ingredient - black-eyed peas. Perfect for watching the OU Sooners/Stanford Sun Bowl game this afternoon!
Here are the ingredients with rough guesses as to the measurements:
1 can black-eyed peas, drained1 can black beans, drained
1/2 jar Clint's medium salsa
1 cup cooked corn
1 red bell pepper, diced
6 green onions, diced
1 teaspoon hot sauce
2 teaspoons red wine vinegar
Mix everything together, add garlic powder or salt to taste. Serve with Tostitos Scoops or Fritos.
I served the dip in a Pfaltzgraff Winterberry dip ramekin that I selfishly bought myself for Christmas.

I've been looking for a recipe like this one, ever since a friend of my dad's made it over summer. It was really good! Something I've got to try!!
:) I'd say something about you making this when you adopt me, but then I'd just seem like a stalker! ;)
PS - I love your new pic that's showing up on your blogger profile. You look to young to be anybody's "Granny"!
I love this caviar, though have not had it with black eyed peas (I'm not even sure I've ever even seen them on our grocery shelves here.
Love that dish pattern, too! I've been eyeing it for a while. I don't think you were the least bit selfish in buying it for yourself. I think you were HONORING yourself.
And I agree with Susie. The first thing that caught my eye was your profile picture, and I thought, "She's more beautiful than ever!" Your profile says you were married 40 years? You must have been a child bride!
Wishing you all the best in 2010, all ways, always.
Horsejumper12341, this is a very tweak-able recipe--thanks for stopping by!
Susie and Katy, thanks for the compliments--I was just wearing makeup. ;)
Linda, I too noticed your photo - I love it!
I also love your dish you bought yourself ;o) Photos are awesome!
