Light Brioche Revisited


In June I discovered a wonderful bread recipe on the blog of Lucie Madeleine and made these hamburger buns. I have made the recipe several times since, to the delight of my family, and most recently for a luncheon for church. This time I made petite rolls, and I was very pleased with the results.

Between rubbing butter and flour together with your fingers and being careful not to add too much flour, this dough is not the easiest to handle; but the reward of following the instructions is a deliciously light and tender roll.


Light Brioche Rolls
(Recipe yielded 48 petite rolls)

2 cups warm water
6 tablespoons warm milk
1-1/2 tablespoons active dry yeast
6 tablespoons sugar
2 large eggs
6-2/3 cups bread flour
1 tablespoon salt
6 tablespoons unsalted butter, cubed

In bowl, combine water, milk, yeast and sugar. Let stand until foamy, about five minutes. Beat eggs. In large bowl, whisk flours with salt. Add butter and rub into flour between fingers, making crumbs. Dump flour mixture onto well-floured counter or Silpat and make a well in center. Add eggs to center. Using dough scraper, stir in yeast mixture and beaten eggs until dough forms, scooping dough up and kneading it with a very light hand, and adding small amounts of flour as needed until smooth and elastic, about 5 minutes. Shape dough into ball and place in greased bowl. Cover bowl with plastic wrap and let rise in warm place until doubled in bulk, one to two hours.

Line two baking sheets with parchment paper. Using dough scraper, cut dough into 4 parts and shape each part into 12 equal pieces. Gently form each piece into ball and arrange about an inch apart on baking sheet. Cover loosely with piece of plastic wrap lightly coated in nonstick spray and let rise in warm place until doubled in size.

Preheat oven to 400 degrees. Bake until tops are golden brown, about 15 minutes. Transfer to rack to cool. Brush with more melted butter, if desired.

I love making bread. I think it helps me to deliberately slow down the insane pace of my life, to take a breath and a pause. And nothing beats that beautiful aroma! Sigh....
